Camomile Sour

I love a good cup of tea! It can be so comforting and I have always loved the slight bitterness. Camomile is one of my favorites and it adds so much to this bright refreshing summer cocktail! The key is to make concentrated tea ahead of time so it stands up to the rest of the ingredients. Make one for just you or make a couple and have a wonderful apéritif with friends! Cin Cin!

3/4oz Barr Hill Gin
3/4oz Suez Liqueur
3/4oz Heirloom Pineapple Amaro
3/4oz Chamomile Tea Concentrate (See Notes)
1/2oz Lemon Juice
Garnish: Lemon Peel

Grab a cocktail shaker and add amaro, Suze, gin, tea, and lemon juice. Add a handful of ice to the shaker and then shake vigorously. Strain the cocktail into a chilled coupe glass and garnish with lemon peel.

Notes: A couple of hours ahead soak 4 camomile tea bags in 1 cup of boiling water. Let it sit on the counter until cool and then move to the fridge until you are ready to make the cocktail. You can make this drink with vodka or a silver tequila if gin is not your preference. You can also use any gin you prefer, but I chose Barr Hill for texture and light honey notes. If you can’t find Heirloom Pineapple Amaro then Nonino Amaro is a suitable alternative.
