Its the New Year! Of course the first recipe of the year needs to be somewhat healthy! I LOVE Kofta, Gyros, Lola Kabobs, and more but usually the traditional ones involve beef and/or lamb. While delicious chicken breast is much more protein dense and their for more health efficient! This chicken kofta wrap comes in a whole wheat lavash with hummus, harissa, pickled onions, and for a real burst of flavor a tahini slaw! Enjoy with some water or my favorite some hot mint tea!

Directions
- Preheat the oven to 450 Degrees and line a baking sheet with parchment paper.

- Use your hands to form 12 egg shaped patties and place them on the baking sheet.
- Place kofta in the oven and bake for 12-15 minutes. If you like a little char you can remove them at 12 and place them under the broiler for the remaining 3 minutes.
- While the kofta bake, prepare the slaw. In a large bowl combine all tahini, olive oil, lemon juice, spices, salt & pepper and whisk until emulsified. Add shredded cabbage and toss well to coat cabbage in dressing.
- Once chicken kofta have a beautiful brown char remove them from the oven.
- To assemble, take one lavash and spread your desired amount of hummus and harissa. Add some slaw, pickled onions, and 2 of the kofta all on the bottom of the lavash length wise. Slowly roll, tucking in the sides as you go, and cut in half.
- Serve with a cucumber salad or some fries and enjoy.
Notes: I make quick pickle onions myself which are super easy, but if you don’t want to you can easily buy some at the store in the pickle aisle.
