Christmas in Paradise

Today is Day 12 of 12 Days of Christmas Cocktails! Yes it’s the last day! I realize now I didn’t do a single peppermint flavored drink, one of Christmas’s stereotypical flavors, but I’ll be very honest it’s really hard for me to make a peppermint drink because I absolutely despise that flavor. It just makes me think of toothpaste and I don’t have anyone around who likes peppermint to tell me if its any good. I’ll figure out how to make something later I promise! I do, however, have a coworker who was sad today that he will not be able to go to Mexico to spend Christmas with his family… His family lives in Cancun! Then I thought tequila sounds better than peppermint schnapps! So, please enjoy this fruity, slightly spicy, tequila concoction!

1 Sprig Lemon Thyme

0.5oz Pomegranate Juice

0.5oz Orange Juice

0.5oz Pineapple Juice

0.5oz Lime Juice

2oz El Jimador Reposado Tequila

Garnish: Salt and a Chili pepper

Salt the rim of a glass by rubbing lime around the rim and dipping the rim in salt. Set aside. Muddle the jalapeño slices and lemon thyme in the bottom of a cocktail shaker. Fill with ice, add all the juices and the tequila, and shake vigorously for 10 seconds. Add ice to the glass and strain the cocktail. Garnish with a chili pepper and serve. Enjoy!

Notes: If you would like the cocktail to be sweeter add some agave or simple syrup. If you can’t handle too much spice, remove the seeds from the jalapeño. I love spicy food so I leave the seeds. As always you can use any brand of tequila you like, but make sure its reposado.
